100g Ground almonds
100g Rice flour
100g Raw Cacao
225mls oat milk
1tsp lemon juice
maple syrup, to taste
Mix all dry ingredients together, using a food processor. Cook up dates with a little water to form a smooth paste. Mix lemon and bicarb and add to milk, then add oil. Slowly add all other ingredients. Add maple syrup to taste.
Ground cashew nuts
Maple syrup/agave/stevia to taste. Make the icing by sight and best done in a food processor.
Bake at 180 Gas MArk 4 for between 35mins and an hour. Check after 35 mins and don't expect the knife to come out totally clean, as it's a dense, rich cake… serve with blueberrys or fruits of the season…YUM
